Tucked inside the sleek Thompson Lower East Side hotel, SHANG’s Chinese-inspired cuisine takes diners on a titillating journey brimming with global flavors. The restaurant reflects Chef and Owner Susur Lee’s life-long goal to both infuse and reinvent Chinese culture abroad. For SHANG, Chef Lee’s approach is playful, bold and bursting with unexpected twists. Dishes become an adventure for the palette, from his rich foie gras and chicken liver pâté with green onion pancakes and black currant jam to the magret duck with osmanthi flower, chili honey, and braised burdock root; to his signature dish, the tangy Singapore Slaw with salted plum dressing. SHANG is named for the Chinese symbol meaning upwards and above, which is a play on the aspiration of Susur’s cuisine, and also references Shanghai, which means “city above the ocean.”
